Tips

Use carabao mangoes if available—they are sweeter and softer than other varieties.

Swap in other fruits like strawberries or peaches if mangoes are out of season.

For extra structure, add a thin layer of crushed Graham crackers between each layer.

Ingredients

  • 3 ripe mangoes (preferably carabao mangoes), peeled and sliced thin
  • 2 packs (about 200g) of Graham crackers
  • 1 cup heavy cream or all-purpose cream, chilled
  • ¾ cup sweetened condensed milk (adjust to taste)
  • Optional: extra mango slices or crushed Graham crackers for topping

Instructions

  1. Chill the cream in the fridge for at least 2 hours before starting. Cold cream whips better and holds its shape.
  2. Peel and slice the mangoes into thin strips or small cubes, depending on your preferred presentation.
  3. In a mixing bowl, whip the chilled cream until slightly thick and fluffy. Gently fold in the condensed milk. Taste and adjust sweetness if desired.
  4. In an 8x8-inch dish (or similar), place a flat layer of Graham crackers. Spread an even layer of the cream mixture on top. Add a layer of sliced mangoes.
  5. Repeat the layers: Graham crackers, cream, and mangoes—until the dish is filled or ingredients run out. End with a cream layer and garnish with mangoes or crushed Graham crackers.
  6. Cover the dish with foil or plastic wrap. Refrigerate for at least 4 hours or overnight for best results. This allows the crackers to soften and flavors to blend beautifully.
  7. Slice into squares and serve cold. Best enjoyed within 2 to 3 days.
