This banana cake is soft, airy, and perfect for birthdays, tea parties, or any day you crave a gentle banana-flavoured treat. With a tender crumb and balanced sweetness, it pairs beautifully with cream cheese frosting but also shines on its own. A lovely way to elevate overripe bananas into something truly special.
Ingredients
- 250g plain flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 115g unsalted butter, softened
- 150g caster sugar
- 2 large eggs
- 1 tsp vanilla extract
- 240g mashed ripe bananas (about 2–3 medium)
- 120ml whole milk or buttermilk
Instructions
- Preheat the oven to 175°C (350°F). Grease and line a 20 or 23 cm (8 or 9 inch) round or square cake tin.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the butter and sugar until pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Add the mashed bananas and mix well.
- Alternate adding the flour mixture and milk, starting and ending with the flour. Mix gently until smooth.
- Pour the batter into the prepared tin and smooth the top.
- Bake for 30–35 minutes, or until a toothpick inserted into the centre comes out clean.
- Let the cake cool in the tin for 10 minutes before transferring to a wire rack.
- Optional: Frost with cream cheese frosting or enjoy plain with a dusting of icing sugar.
