Mustikkapiirakka is a beloved Finnish summer pie that showcases wild blueberries (or bilberries) in a creamy, tangy filling. It’s a staple of kahvipöytä—the Finnish coffee table—and comes together easily with pantry basics. If you don’t have access to bilberries, fresh or frozen blueberries work beautifully.

Ingredients

  • For the crust:
  • 100g butter (softened)
  • 85g sugar
  • 1 egg
  • 180g all-purpose flour
  • 1 teaspoon baking powder
  • For the filling:
  • 200ml sour cream or plain yogurt (can use Greek yogurt)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 60g sugar
  • 200g fresh or frozen blueberries (do not thaw if using frozen)

Instructions

  1. Preheat the oven to 200°C (390°F). Grease a 24cm pie tin or tart pan.
  2. In a mixing bowl, cream together the softened butter and sugar.
  3. Beat in the egg.
  4. Add the flour and baking powder, mixing until a soft dough forms.
  5. Press the dough evenly into the base and sides of the prepared pan.
  6. In another bowl, whisk together the sour cream, egg, vanilla, and sugar until smooth.
  7. Scatter the blueberries over the unbaked crust.
  8. Pour the sour cream mixture gently over the berries.
  9. Bake for 35–40 minutes, or until the filling is set and the crust is golden.
  10. Cool completely before serving. Best enjoyed with coffee.
