Mustikkapiirakka is a beloved Finnish summer pie that showcases wild blueberries (or bilberries) in a creamy, tangy filling. It’s a staple of kahvipöytä—the Finnish coffee table—and comes together easily with pantry basics. If you don’t have access to bilberries, fresh or frozen blueberries work beautifully.
Ingredients
- For the crust:
- 100g butter (softened)
- 85g sugar
- 1 egg
- 180g all-purpose flour
- 1 teaspoon baking powder
- For the filling:
- 200ml sour cream or plain yogurt (can use Greek yogurt)
- 1 egg
- 1 teaspoon vanilla extract
- 60g sugar
- 200g fresh or frozen blueberries (do not thaw if using frozen)
Instructions
- Preheat the oven to 200°C (390°F). Grease a 24cm pie tin or tart pan.
- In a mixing bowl, cream together the softened butter and sugar.
- Beat in the egg.
- Add the flour and baking powder, mixing until a soft dough forms.
- Press the dough evenly into the base and sides of the prepared pan.
- In another bowl, whisk together the sour cream, egg, vanilla, and sugar until smooth.
- Scatter the blueberries over the unbaked crust.
- Pour the sour cream mixture gently over the berries.
- Bake for 35–40 minutes, or until the filling is set and the crust is golden.
- Cool completely before serving. Best enjoyed with coffee.
