Ingredients
- 3 large ripe bananas (about 300g peeled)
- 120g unsalted butter, melted and slightly cooled
- 150g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 190g plain flour
- 1 tsp baking soda
- ¼ tsp salt
- Optional: 60g chopped walnuts or chocolate chips
Instructions
- Preheat the oven to 175°C (350°F). Grease and line a 9x5-inch loaf pan.
- Mash the bananas in a large mixing bowl until smooth.
- Add the melted butter, sugar, egg, and vanilla. Stir until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the banana mixture and gently fold until just combined.
- If using nuts or chocolate chips, fold them in now.
- Pour the batter into the prepared pan and level the top.
- Bake for 55–60 minutes, or until a skewer inserted in the centre comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
