Ingredients
- For the base:
- 150g digestive biscuits or graham crackers
- 75g unsalted butter, melted
- For the filling:
- 200g dark chocolate (around 60–70% cocoa), chopped
- 200ml heavy cream
- 2 tablespoons honey or golden syrup
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
- A pinch of salt
- For the pistachio layer:
- 100g shelled pistachios (unsalted)
- 2 tablespoons icing sugar
- 2 tablespoons neutral oil or cream
- 1/4 teaspoon almond extract (optional)
- Topping:
- Chopped roasted pistachios
- Dark chocolate shavings or curls
Instructions
- Crush the biscuits into fine crumbs and mix with melted butter. Press into a tart tin and chill in fridge.
- Make pistachio paste: blitz pistachios, sugar, oil and almond extract until smooth. Spread over the chilled base.
- Heat cream with honey just until bubbling. Remove from heat and stir in chocolate, butter, salt and vanilla. Stir until smooth.
- Pour over the pistachio layer. Chill for at least 2 hours or until set.
- Garnish with chopped pistachios and chocolate shavings before serving.
